Best Zuchinni Bread I Ever Made!!!!!

I made 6 loaves of this bread already (Russell just went to work and took 1 with him) and I have 6 more in the oven. I had an overload of zuchinni that was given to us and had to do something with it. Russell doesn't really like it just cooked as a vegetable but he loves this bread. I made this new recipe and it's the best I've ever tasted. Give it a try!


Yummy Zuchinni Bread


Ingredients:

3 cups all-purpose flour

1 tsp. salt

1 tsp. baking soda

1 tsp. baking powder

3 tsp. ground cinnamon

3 eggs

1 cup vegetable oil

2 1/4 cups white sugar

1 tsp. vanilla extract

2 cups grated zuchinni

3/4 cup chopped walnuts


Instructions:

Spray cooking spray into two loaf pans (8x4) or 6 mini loaf pans. I use mini. Preheat oven to 325 degrees.

Mix together flour, salt, baking powder, soda and cinammon in a large bowl.

Beat eggs, oil, vanilla and sugar together in a smaller bowl. Mix zuchinni to this. Add creamed ingredients to the dry mixture and mix well. Stir in nuts. Pour batter into prepared pans.

Bake for 60 minutes for large pans, 45 mins for minis. Use toothpick test to make sure bread is done. Cool in pan on rack for 20 minutes. Remove bread from pan and cool completely.

    I don't think I've ever tasted zuchinni in any form before. Don't think I've ever even seen one. Though, that's not really saying much, is it? LOL!

  2. I'm so jealous! Your zucchini bread looks delicious! I love zucchini bread and all of our zucchini plants died. I got to make two loafs this summer. Last summer we were over run with zucchini and I was able to make it a lot.

  3. I like zucchini bread but haven't had it since I was a kiddo. Man I wish I knew someone with a garden because the stuff in the stores right now is just ick!

  4. I've got a lot of shredded, frozen zucchini I really need to dig out and make into bread. Along with cranberries and rhubarb. *sigh*
