Yummy Muffins


I made these just a bit ago. They are really yummy and smell heavenly when cooking. If you like bran muffins, you will probably love these. I think they are pretty healthy and are not loaded with sugar and have honey instead.
Raisin Bran Muffins
1 1/3 cup all purpose flour
1 1/2 tablespoon baking powder
1/4 tsp salt
1 tsp cinnamon
3 cups raisin bran
1 1/3 cup milk
2 eggs, well beaten
1/4 cup melted butter
1/2 cup honey
Stir together flour, baking powder, salt and cinnamon.
Pour Milk over raisin bran, stir, and let stand for 5 minutes. Stir in eggs, melted butter, and honey. Add dry ingredients and stir just until moistened. Spoon batter into 12 greased muffin cups. Bake at 400 degrees for 20 minutes or until a toothpick insertede in a muffin cup comes out clean.
In my oven these only took 15 minutes to cook.

  5. I noticed that the kids aren't really thrilled when I make some of the healthier type muffins. My son keeps asking me to make the apple ones I made awhile back...I hope I can remember what recipe I used. I remember I used one recipe for the muffin and another one for the thick streusel on top and I threw in one large chopped apple. My son loved those.
